Porotta-Chappathi




              A blend of Chappathi and Kerala Porotta..Thats what came to my mind when I thought of making kerala porottas at home. I didnt want the unhealthy maida in all of my daily diet. So, sometimes I made "my" typical healthy version of Kerala porotta. Although its layers dont come out as in kerala porottas, it tastes much better than normal chappathis. Seeing my pictures, readers might feel my recipe is very difficult but its quite easy after your first try.




Ingredients: 
  1. All Purpose flour: 1 cup
  2. Wheat flour : 1 cup
  3. Warm water : As required
  4. Oil : As required (see Note )
  5. Salt : As required
Recipe:
  1. Mix together wheat and all purpose flour by adding warm water and salt to make a dough. Kneading the dough well for few minutes and adding warm water makes the dough soft. Adding 1 tsp of oil at this stage is optional.Keep kneading until you get a smooth dough of right consistency.Rest it for 5 min.
  2. Divide the dough into equal lemon sized balls.If required apply little oil and make it rest for 2 min.
  3. Rub little oil over the roller to avoid sticking of dough onto the rolling surface and start rolling to make a thin sheet.
  4. Rub little oil over this sheet.
  5. Fold the sheet starting from the edge towards inside in the manner inside-outside-inside (fold one over the other as in Kerala Porotta) to form a multi layered strip shaped . Now hold their two ends and gently pull them apart so that their length increases as shown ..  




  6. Hold one end and rotate it round towards inwards to form a circle shaped dough. 

     

  7. Rub some oil on each side of all the prepared doughs and keep it covered and aside for 15 min or half hour in a covered bowl.
  8. Press and roll these doughs outwards just like its done for chappathis. 
  9. Heat a non stick pan and fry them by flipping to get hot porotta-chappathis. Gently crush the sides of the chappathi towards each other to bring the layers outside.
Note:
  • Oil thats used in this recipe is Olive oil as I felt its healthier. Vegetable oil or ghee can also be used.
  • While frying them you can sprinkle oil to make it more crispier
